Butternut Tart

Butternut Tart
This is a popular dish in our family. Can be served just as a snack or as a side dish at a dinner or braai.


  • 3kg raw butternut
  • 250ml fresh cream
  • 250ml flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup sugar
  • 125g melted margarine or butter
  • 2 eggs – beaten
  • Cinnamon and sugar mixture


  1. Pre-heat oven to 180 C
  2. Boil butternut until soft, remove from stove and drain off water.
  3. Add all the above ingredients (except cinnamon and sugar) to the butternut and beat until smooth and creamy.
  4. Pour into baking dish, sprinkle cinnamon and sugar and bake for plus minus 1 hour.
